このところの献本とかトークイベントとか男前料理とか

　今週は三冊献本をいただいたのです。
　ブルータスの漫画特集と週刊SPA!と「和歌ネエの男前ごはん」

　ブルータスは例の編集者Sから。
　去年一緒に行った大谷石博物館面白かったな。
　SPA!はお願いしていた丸田祥三さんのトークイベントの告知が載ったからかな。

　そういえば先週発行人の光明くんと打ち合わせをしていたら切込隊長と遭遇してあれやこれや際どい話をしていたこともありましたが（ふぇるさんがどーとかこーとか）よくわかりませんのでにおわすだけにしておきます。

　お料理の本は以前、岸田一郎さんのところで一緒に仕事で関わらせていただいた美人編集者Eさんからの献本。男の人でもガガーーーっと作れる82ものお料理レシピ集です。
　ざっと見てみたところ、極力なべ釜を一つ二つで作ることを主眼にされている様子。「すべて、3ステップ以内！」というのも好ましい。
　そういえば仲良くさせていただいているダニエル・マルタンさんも「フライパン一本でできるお手軽フレンチ」という本を出してましたな。そういうニーズってのもあるのかしらん。

　ということで、以下に「この冬に良く作っていた鍋一つで三日は過ごせる男の手抜き料理レシピ」をつらつらと書いてみたりして。

　何を隠そう料理が趣味なのです。
　とはいえどこで習ったわけでもない適当料理なんで目計りでざっくり作る系のアレです。なんだかプロっぽい物も作れるようになっているのはODINの菊地さんとか龍吟の山本さん、ゆうじさん、青空さん……と言ったヲタク料理人の知人があれこれ教えてくれるのをどんどん取り込んでいるからでして、元ネタがなんだかもさっぱりわかりません。
　あと修羅場だけは踏んでいまして、20代の頃にはバブル世代のおぼっちゃまおじょうちゃま軍団の先輩が「ヨット遊びしようぜ」とか「ウチの別荘でワイン＆バーベキューするから集合～」とか、そういったお誘いがあるたびに料理人として月に2回は借り出されていたので初見の素材でも大抵の対応できますし（釣りたての150cmくらいの魚とか捌かなきゃはじまらんのよ）、一人で50人分の料理をデザートまで込みで一日中ずーっと作り続けることもできたりするのです。
　そういうときには仕事人に徹するので、あるときなどは偶然出席していた道場六三郎さんご夫妻がやってきて「アナタどこで修行されてるの？　給料はおいくら？」と聞かれたことがあったりして。（単に持ち込んでた包丁がプロ仕様だったからかと思われ）

　ということで、よくWebで見かける簡単料理レシピにならって、ここ数ヶ月作ったものをざっくり書いて見ますと……

材料

鶏手羽先（特売だと10本で400円くらいのパック）
長ネギ（4本で198円くらい）
生姜（あればひとかけ。なければ無視）

作業

大き目の片手なべに水を入れて鶏手羽全部と長ネギ一本をぶつ切りにしたのと薄切り生姜を入れて火にかけておしまい。
気になる人は灰汁をすくう。

食べ方

・一度に絶対に食べきれないくらい大量のスープができますので、まず手羽を取り出してお箸で肉だけそぎ取ってバンバンジーみたいにして食べます。
・葱とキュウリを千切りにして醤油とラー油で食べるもよし、豆腐の上に乗せるもよし。
（ちなみに肉をとった後の骨は鍋に戻しておきます。コレ重要）
・汁だけとりわけて塩コショウすればおいしい鶏スープになります。ボウルに卵を溶いておけばかきたま汁に。海苔を一枚入れてよく混ぜて食べると大変美味しいのでマジお勧め。いりゴマと刻み葱も欲しいかな。
（二回ほど火を入れたり食べたりまた火にかけたりしているとだんだん濃くなってきて煮凝り状態になってきます。葱を追加で投入していくとエキス分が出てきて更に美味しくなります）
・豆腐ときのこ類と葱を入れて一人鍋。ニラやキムチなんかを入れてもおいしい。
・野菜炒めをするときに煮凝りを大匙一杯入れて煮込んで片栗粉でまとめるととおいしい中華丼に。オイスターソースがあるとなおよし。
・素麺をゆでて鳥にゅうめんに。
（素麺はお湯を沸かした片手鍋に素麺を一把入れて蓋を閉めて2分ほっとくと茹ります）
・チキンラーメンを作るときに使うと驚くほどうまい。塩を使ってないので応用が利きやすいのです。
・最後の最後、骨を取り去ってコンク状のスープになった時、洗ってない米を一握りぶち込んで弱火で20分ほど煮込んで中華粥で締め。
・冬瓜とか煮ても美味しいけど男の一人料理っぽくないので割愛。

注意点と応用編

・冬の間は「朝、火を入れてスープを食べて、夜もう一度火を入れて…」と三日くらい持つのですが、夏は怖いのでやめたほうが無難かもです。
・風邪気味の時には生姜をすり下ろして大量に入れると一発で治ります。煮込むときに薄切り生姜を入れて、食べるときにすり下ろしを入れて、とか。

その2

材料

レバー（豚か鳥。パックで300円くらい？）
トマト（4つで298円とかそれくらい）

作り方

レバーを適当に食べやすく半分に切って、あれば血の塊を取っておく。面倒なら無視。切るだけ。
トマトを1.5cmほどの薄切りにしておく。フライパンの大きさで二個にするか三個にするか適当に。
玉ねぎがあれば半分とか一個適当にスライスしておく。
フライパンにオリーブオイルとニンニクみじん切りを入れて弱火にかけ、レバーを軽く炒め、トマトを敷いて蓋をして弱火で10分。ひっくり返して5分くらい火を入れる。蓋は締めたまま蒸し煮するのだ。塩コショウも適当に。
適当な頃合にあけてみるとレバーのラグーソースの出来上がり。
スパイス（オレガノ、ローズマリー、バジル）なんかがあるともっとそれっぽいけどなけりゃいいや。塩をクレイジーソルトで代用すれば大抵はいってるし。

食べ方

・これも量が多いのでタッパーに詰め替えますが、残った汁気がもったいないので冷凍ご飯を投入し、じくじくと炒め含めるとチキンライス風になるので熱いうちにはぐはぐ食べる。タバスコを入れてケイジャン風にしてみるとか。
・パスタを茹でて和える。
・飽きたらカレー粉を投入。オクラとかピーマン、パプリカを入れると妙にうまい。

　大体こんな感じで作っていくと、一食100円もかけずに自炊できるって寸法です。スープなんて10食以上できちゃうし。
　あと何作ったっけかな……。
