マティーニ！　マティーニ！　マティーニ！

George's Barのマティーニ

葉巻奉行さんとやりとりをしていて思い出したので備忘録。
（mixiの日記だと検索利かないんだもの）

こういった話は結構たくさん見聞きしているんですが、
いつかちゃんと残しておかないといけないですな。＞どことなく話を振ってみる

進駐軍マティーニ、あるいはホテルマティーニの作りかた～1

琴酒（ジン）の新瓶を開く、瓶首の空隙に苦艾酒（べるもっと、これもほんと）を入れ、栓をして振り冷蔵庫へ。
翌日にはああら不思議、琴酒と苦艾酒が完璧に交ざり合い硝子器（グラス）に注ぐだけで馬丁尼（マティーニ）が。
米軍将兵に大量に飲ませるための知恵だったそうである。

ちなみに
「苦艾酒を入れる前に琴酒を少々くすねて飲んでおかないと冷やしている途中に液が膨張して瓶が割れてしまう」
とも聞きましたが、伺ったのが「店主の分け前」でおなじみの大泉さん＠コレオスなので単に飲みたかったからなのかどうか定かではありません。

ダグラス～1

なお「ダグラス」というマティーニの亜種もあるようでして、
これはシェイクするだけなのですが、進駐軍のお客さんのうち
空軍の将校が好んで飲んでいたことから付いた名称だそうです。
この際、逆トップで振ると…

ダグラス～2

さて件の「ダグラス」です。
空軍将校が好んで頼んだことから「ダグラス」と名づけられたシェイクのマティーニですが、若かりし頃のジョージさんが逆トップで振っているのを見て
「オレは飛行気乗りだぞ。船の中みたいに振りやがって…」
と言われたそうです。
50年以上前にはそれなりに知られていたということでしょうか。

…こんな話を稲田さん柳倉さん大泉さん佐伯さんに囲まれて伺っていたのでした。

逆トップについて異聞

（一般的にはホテルオークラのメインバーテンダーさんが「お客様にシェイカーのお尻を向けるのは失礼だ、とのことで始めたという説がありますが、ここに挙げたのはGeorge's Barの佐伯さんに伺った説です）
佐伯譲二さん曰く、戦前バーテンダーになるのにはホテルもしくは客船で修行するしか方法が無く、逆トップを振るのは客船で修行した人、もしくは師匠が客船バーテンダーだったというのです。

当時は氷が貴重品だったのは言うまでもありませんが、船の上ですから尚更のこと。
シェイカーの中に残った氷を綺麗に洗ってもう一度使うということは褒められたことではありませんがよくされていたそうです。
銅製のシェイカーも洗ってはすぐに使うという感じでいつも表面に霜が付いていたそうです。（下働きのときは仕事終わりにシェイカーの緑青を取るのが大変だった、とも聞きました）
客船の中のバーカウンターは狭い空間であることから半円形の事が多く、シェイクするときに普通に振ってしまうとシェイカーについた霜がお客さんに飛び散ってしまうので（ストレートカウンターのように横を向いて振ることが出来ない。ましてや後ろ向きになるわけにもいかないでしょうし）、トップを逆に持ち自分に水分が飛んでくるように振ったのが大元だったとのことです。

僕もジョージさんが逆トップで振っているのを見てホテルオークラの話をしてみたのですが、「アタシの師匠が船乗りだったんでね…」とこの話をされたのでした。

よく冷えたグラスをベルモットでリンス。そこに良く冷えたジンを注ぎピールを10枚以上しておしまい。

半分以上はGeorge's Barの佐伯さんのお話になってしまっていますが、
バーテンダー歴50年以上の名手は病から復活されて現役そのもの。
Woodyの田中さん曰く「なんか前より元気になっちゃったみたいです」とのこと。
久しぶりにGeorge's Barにも顔出しに行かなきゃだなぁ。
