恵比寿でフカヒレ麺の後ビール、XO醤をつくる（前編）
今日は恵比寿のとしやん宅に用事があったので筑紫楼で久しぶりにフカヒレ麺を食べることに。
先日筑紫楼の本店（恵比寿店と呼称しているらしい）に行ったところ、改装工事中で入ることかなわず仕方なく目の前のクンビラでカレーを食べたことがあったのだが、さくまあきらさんから改装工事は終わっていると情報を入手していたのだ。たまーに食べたくなるんだなぁ。
んが、出かける間際に五郎八と戯れていたら出るのがすっかり遅れてしまった。
リュウビンタイと干し貝柱と五郎八
ランチは14時がL.O.だと記憶していたのであわててタクシーで恵比寿へ。本店だと間に合わないかもしれないのでプライムスクエアにある広尾店に急ぐと、今日は休日なので終日営業だとのこと。なぁんだ。
休日はランチがないので普通のメニューから選べばいいらしい。
定番のフカヒレ煮込そばと、黄ニラとモヤシの炒めもの。それと季節のお薦めだという「フカヒレ入りの冷たいつゆそば」というのがあったのでこれも頼んでみる。デザートにはやっぱり杏仁豆腐。
黄ニラとモヤシ、それとフカヒレ煮込みそばはいつものお味。
ここのスープは上湯というより鳥のこってりしたスープなのだな。たとえるなら天下一品系というか。安いフカヒレにはこういったスープの方がおいしいし。黒酢をかけて味を変えつつ楽しむ。
昔よく来てたころ（10年位前？）には珍しかった赤酢を使っていたのだが近頃では黒酢なのね。
野菜の炒め物を陸羽と比べちゃいけないのはわかっているが久しぶりに香港に行きたくなってきた。
そして初挑戦の冷たいつゆそばがかなりのヒット。
ゴマの香りが漂う透明な鶏がらスープと、ゼラチンで煮凝りのように緩やかに固められたスープ、そして青菜とモヤシとフカヒレがトッピング。スープも麺も器もよく冷えていて夏の最中にはかなり人気になるかと思われる。こちらには普通の酢がよく似合う。
んでやっぱり最後は杏仁豆腐。
筑紫楼といえばフカヒレと杏仁豆腐なのだ。
確かヌキテパがまだあたごうるだった頃に、道を挟んだ向かいっかわあたりで安くておいしいフカヒレを出してくれると評判だったちっちゃな中華料理屋が今の筑紫楼だ。そう考えると学生時代から来てるから15年とかなのかな？ ん？ そんな前じゃないか。
ともあれフカヒレで有名だった店だったのだが、ラブホテル街の真ん中に新店（今の恵比寿店＝工事が終わった店）ができた時あたりから俄かに杏仁豆腐が人気になったんだっけか。
当時、仲間内のライターや編集者とで「東京杏仁豆腐倶楽部」というのをやっていたのだが、筑紫楼の前にはたしか文淋あたりが人気だったかと記憶している。あとタイプは違うけど虎萬元とか。
そんなこんなを思い出しながら杏仁豆腐を食べてみると、おいしいのではあるが往時の驚きは感じられなかったのだった。アイスクリームを隠し味に入れるタイプの杏仁豆腐はどこでも食べられるようになっちゃったからなぁ。もちろん変わりなく美味しいんですけんども。
恵比寿三越経由でとしやん宅に伺い細かな用事をすまして帰宅。
舞桜ちゃんも幼稚園入園ってことはFくんちと同級生ってことなのねん。へー。
家に帰ってくると、なんと初亀の村上くんが女性と一緒にまたもAbbot's Choiceにいるとのことでお誘いのメールが。顔出してみるか。
手土産に太宰府天満宮でしか買えない梅酒を一瓶店に献上。多分美味しいはず。
ビールのんだりカクテルのんだりしながらだべる。
コワントローのGold No44というレアなビンテージリキュールが大層うまかった。
バーボンが好きだという方がいたのでエズラBやテイラーのオールドボトルを薦めていた。そりゃ美味いけども、そんなの飲ませちゃってほかの店に置いてるかどうか…
チェックがてらにバンブーカクテル、クォーターデッキも。締めにはラスティネイル。
明日は朝からサイクリングだというので二件目にはよらずに23時前には解散。
さてそして家に帰って来てXO醤の製作へと取り掛かるわけだ。（前フリなげー）
